Cheap, quick and easy: This is Gordon Ramsay’s one-ingredient soup recipe

A new year is upon us and many of us will set out to follow through on our resolutions. One of those is most likely eating healthier after the excesses of the holiday season.
While this can seem like it will be a hard slog, especially through the dark, cold winter days, fortunately world-renowned chef Gordon Ramsay has a delicious soup recipe that’s “easy beyond belief.” In just a matter of minutes you can treat your taste buds to this delicacy that only requires one ingredient, broccoli.
Gordon Ramsay’s broccoli soup recipe
The multi-Michelin-starred chef shared his broccoli soup recipe over a decade ago on his show ‘Hell’s Kitchen’ and since then it has gained a loyal cadre of fans who sing its praises. You can keep it simple or decorate the dish with your choice of garnishes.
First off, you need a pot of boiling water and some heads of broccoli. Ramsay explains that you want to use broccoli that is dark green, whose florets are “all nice and tight, closed up. You don’t want it flowering.”
Holding the head of broccoli upside down in the center, you want to cut round separating the florets from the center. Holding one of them up to the camera Ramsay says, “that tastes of something quite spectacular.”
Before you place them in the boiling water, you want to season the water with salt, and then again once the florets are in the pot. Cover with a lid to bring the water to a boil again rapidly.
Cook them until they are easy to cut with a knife, “four, four-and-half minutes. Nothing more than that.” Remove them from the heat, pouring them out into a colander resting in another pot so that you don’t lose “the secret ingredient,” the broccoli stock.
While the florets are still hot, put them in a blender and fill it half full with the water that the broccoli was cooked in. Holding the lid down tight with a towel, give it a couple of on-offs so that the water and broccoli can start mixing and it doesn’t gain momentum and shoot through the cloth.
Next thoroughly blend the broccoli and water until it gets a uniform, creamy texture. Check the seasoning to see if you need to add a little more, and now your soup is ready to serve.
Dressing up your broccoli soup
As mentioned before, you can garnish your soup as you like. Ramsay decorated his with some walnuts and goat cheese on top of them with a dash of black pepper and some olive oil.
