Berasategui emphasizes that this dish uses ingredients you can find at any grocery store. He recommends shopping early, as prices tend to rise during the holiday season.
The star of the dish is mussels, which are rich in protein, omega-3s, iron, vitamin B12, and other essential minerals that support the immune system. The full ingredient list is hearty but straightforward: 2.6 pounds of fresh mussels, 2 cups of fish stock, 3.5 ounces of white wine, 3/4 cup heavy cream, two celery stalks, one medium onion, one leek, one carrot, two small potatoes, two tablespoons butter, two tablespoons olive oil, salt, pepper, and fresh parsley or dill.
Step-by-step: Mussel cream soup
Start by cleaning the mussels with a small knife. Cook them in a pot with white wine for five minutes over medium heat, covered. Reserve the cooking liquid, then remove the mussels from their shells, discarding any that remain closed.
Next, chop the vegetables and sauté them over medium heat for about eight minutes, taking care not to brown them. Peel and dice the potatoes, then add them to the pot along with the reserved mussel liquid. Pour in the fish stock and simmer for roughly 15 minutes, until the potatoes are tender.
Finally, add the mussels back into the pot and cook for a few more minutes. Remove from heat and blend everything with an immersion blender until smooth and creamy.
