This 3-minute Jamie Oliver recipe will replace every canned or jarred pasta sauce in your kitchen
No matter what time of year it is, a plate of pasta is always sure to satisfy your hunger. For those of you that don’t have a nonna who taught you how to prepare a delicious basil tomato sauce, celebrity chef Jamie Oliver shared how to whip up this comfort food in just a few minutes.
The basic ingredients are basil, chili pepper, garlic, and a tin of whole tomatoes. But you can add just about anything else you want to create a dish to your liking.
Jamie Oliver’s 3-minute pasta sauce recipe
The British celebrity chef has been sharing cooking secrets for nearly three decades through his award winning books and tv show. His tips for everyday home cooks make preparing fresh, healthy dishes accessible to all.
As for his 3-minute pasta sauce recipe, you first need to put a frying pan on the burner set to “full whack.” While it is heating up, slice up two cloves of garlic and a chili pepper. In order to get the fruitiness of the chili pepper without the hot spicy kick, Oliver says to remove the capsaicin, the white stringy part connecting to the flesh and seeds.
Once ready, put some olive oil in the pan, and add the garlic and chili pepper. While those are heating up, grab some basil and remove the leaves from the stalks, and set the leaves aside for later.
Don’t toss the stalks. Instead, chop them up and throw them in the pan. “They have a kind of slightly green house flavor,” says Oliver, adding, “which I love.”
Next comes the tomato. Open a tin of Grade A whole tomatoes, “You want to use the best quality,” Oliver says. “You don’t need a blender, you don’t need a sieve, use your hand,” to rub and break the tomatoes into the pan. Clean out the tin “with just a little swig of water” and add it to the sauce in the pan.
In the video he posted he added frozen peas, but you can add whatever you want to “pimp up the flavor and the nutrition.”
As for the pasta, Oliver prefers to use fresh lasagna pasta and cut it into shapes of his own choosing. He says this “gives you something that really makes you feel that you’ve put a bit of love into it.” Although he points out that you can use whatever kind of pasta you want.
When the pasta is ready, drain it but save the “starchy” pasta water so that you can add a little to the pasta sauce. Add in the pasta as well and toss, then cook for another 30 seconds so that it soaks up the pasta sauce’s flavor. Don’t forget to season it to taste.
Next, add shredded or grated Parmesan cheese while the pasta and sauce are still in the pan. After you’ve put in on the serving dish, add the basil leaves, along with a “kiss of nice extra virgin olive oil,” and shred some feta cheese over your creation for its “slightly tangy” flavor.
“That is a very simple beautiful, beautiful, basic tomato sauce, that is so exciting and delicious,” Oliver concludes. Buon appetite!
