  • 1 container plain yogurt (optional, for a light sauce)

Directions:

  • Cut the monkfish fillets into cubes and chop the vegetables into bite-size pieces.
  • Thread the fish and vegetables onto skewers, alternating as you go.
  • Drizzle with olive oil and season with salt and pepper.
  • Cook on a grill pan or bake in the oven at 350°F for 10 to 12 minutes, turning occasionally so everything cooks evenly.

Fish Tacos

Ingredients:

  • 14 oz cod or sole fillets, boneless
  • 8 corn tortillas
  • 1 avocado
  • 1 tomato
  • A handful of lettuce
  • 1/2 cup shredded cheese

Directions:

  • Cook the fish fillets in a skillet with a little oil until fully cooked and easy to flake.
  • Break the fish into small pieces.
  • Warm the corn tortillas for 1 to 2 minutes per side.
  • Fill each tortilla with fish, then top with avocado, tomato, lettuce, and shredded cheese.
