The World Series has us all thinking of Canada’s impact on sport - but what about food? When you think of Canada and crave comfort food, one dish stands out in its homegrown simplicity: poutine.

At its core, this dish pairs hot fries with cheese curds and a rich gravy, three humble ingredients that combine into something unique. And perfect to enjoy while watching the Blue Jays (potentially) take the World Series.

How to make poutine

It begins with potatoes cut into chips, soaked to remove excess starch, and deep-fried in two stages: once at a moderate temperature, then at a higher heat to finish crisping.

Then there’s the curds: if you can’t find white cheddar curds, a torn chunk of full-fat block mozzarella will do just fine. We can’t be friends, but it’s OK.

Finally comes the gravy, the crown jewel of most meals and this one is no different. The base begins with butter and flour, cooked until golden, then whisked with broth. If you’ve gone too far either way in terms of thick or thin, just know that a little cornstarch is the trick to coat the fries without turning soggy.

Once your fries are hot and crisp, season them lightly with salt and transfer them into a bowl. Ladle over the warm gravy that drips down a blanket from the heavens so that the fries are coated (I’m getting excited), then toss in the curds while everything is still hot.
