Neither the fridge nor the pantry: here’s how to best keep strawberries fresh and prevent them from going bad
Thermotherapy is a technique that kills all bacteria by simply washing the fruit with hot water, then cold water, and drying the fruit thoroughly.

Many countries are already in full strawberry season mode with the berry one of the most consumed and popular fruit.
In many European nations, supermarkets are beginning to fill up with trays, most of them from hailing Huelva in the south of Spain. However, despite their attractive flavor, many shoppers are reluctant to buy them in larger quantities due to their inability to last at home.

We’ve all seen how quickly strawberries can go bad but to avoid this happening, there’s a preservation technique called thermotherapy.
What is thermotherapy?
Thermotherapy uses water at different temperatures to kill the fungi and bacteria that live on the surface of the fruit and end up creating mold. For strawberries, simply place them in a container with warm water between 50 and 60 degrees and wash them thoroughly. After this first wash, a second wash should be done with cold water.
The contrast also reduces the residue caused by the many pesticides some strawberries use to preserve them properly. It’s also important to dry them after washing to prevent new mold growth, and then store them in a container without stacking them.

It’s also advisable to store the strawberries in the refrigerator. Not due only for the cooler temperature, but also to protect them from light and you’ll also need to be careful not to place other objects on top of fruit and ensure to keep them away from apples and bananas, which emit ethylene.
